Hummus Crostini

Hey, so remember the post I JUST added to the site, with my Hummus & Caramelized Onions & Mushrooms? If not, click the link. Here’s how to turn it into a crunchy scrumptious crostini. Enjoy!

you’ll need

1 Hummus & Caramelized Onions & Mushrooms

1 2 foot long baguettes, your favorite type. I used Semolina Baguettes,

Either 1/2 cup Pesto Sauce OR

1 cup fresh basil, 1 clove of garlic, and 1/2 – 2/3 cup olive oil

3-4 large cloves of garlic

Slice the baguettes on a bias; you should get about 17-18 slices from each baguette, at around 1 inch thick. Drizzle with olive oil and bake under a low broil for 4-5 min until they get toasted. Remove from oven, and immediately rub with the garlic cloves. Set aside.

If you have the pesto in your freezer like I always do then use it. If not you can make a quick ChimiChurri sauce by processing the basil, garlic, and olive oil together.

Place the Hummus on the toast slices; then add a spoon of the pesto or chimichurri, and top with the caramelized onions and mushrooms. Drizzle some more pesto or chimichurri over the tops, and serve.
