Fancy shmancy and super light, this hearty salad is filled with nutrition. High in protein, glucose, and vitamin C, this meal will keep you satiated for a while. And its SO easy to make… you’ll be dancing along to Bootylicious the whole time. Here’s how its done:
Serves 1.
1 chicken breast, sliced into 3 or 4 thin cutlets
2 tbsp balsamic vinegar
1-2 large handfuls of mixed salad greens
1/3 cup red or green seedless grapes, halved
1/4 cup chopped walnuts, lightly toasted
2 tbsp dry cranberries
Dressing:
2 tbsp balsamic vinegar
1 tbsp maple syrup
1 tbsp olive oil
pinch of salt and pepper
Marinate the chicken cutlets in the balsamic vinegar for 5 minutes. Grill or fry in a pan until chicken is cooked through. Set aside to rest.
To serve, layer the salad greens, and the halved grapes on your plate. Slice the chicken into bite size chunks, and place on top of the grapes. Top it all off with the walnuts and cranberries.
Make the dressing: whisk together the dressing ingredients in a small bowl, or shake together in a small container until well blended. Pour over the salad and serve.
You can use any mix of fruits or veggies that you enjoy eating. This salad also packs very well for lunch to go.
