My sister asked me if I knew any recipes for French Onion dip. I said “nope” but I could try and figure one out. And it was a hit at my Halloween party in October. Make it, eat it, enjoy it. Satisfaction guaranteed but your money will not be returned.
1 can white beans, rinsed and drained
1 medium onion, coarsely chopped
1/2 cup sour cream
1/2 cup plain greek yogurt
1 tbsp olive oil
1 tbsp chopped mint, basil, or dill
1 medium clove garlic, grated or finely chopped
salt and pepper to taste
Heat the olive oil in a medium pan over moderate heat. Add the chopped onion and a pinch of salt, and saute for about 6-10 minutes until the onions have sweated and turn brown. Watch them carefully so that they don’t burn. Remove from heat and let cool
Pulse the white beans and garlic in a food processor until they are halfway between chunky and smooth. Transfer to a bowl and add the sour cream, yogurt, and chopped herbs. Add the fried onions and stir combine. Season to taste.
Serve with your favorite tortilla or pita chips.
