Spinach & Radish Salad

Palatable, refreshing, spicy. Enjoy!

to serve 4-6

1 16 oz package prewashed baby spinach, roughly chopped

1 bunch radishes, trimmed and thinly sliced

1/3 lb cherry tomatoes, halved or quartered

1/2 inch ginger root, grated

1 blood orange (or 1 small regular orange), juiced

1/4 cup olive oil

salt & pepper to taste


Layer the veggies on a platter or in a bowl. In a separate small bowl whisk together the grated ginger, orange juice, olive oil, and S&P. Dress the salad and serve!
