Crab & Avocado Salad

Finally, a new way to enjoy imitation crab without mayonnaise or soy sauce. Definitely a great addition to any menu, brunch, lunch, or dinner. Enjoy!

Ingredients – Serves 4

1/2 prepackaged salad mix, or about1 cups of chopped lettuce

6-8 sticks of imitation crab, cut into ~1 inch chunks

1 avocado, cut into ~1 inch chunks

1/2 granny smith apple, shredded

salt & pepper, to taste

 

Dressing:

1 tbsp apricot jam

1 tbsp balsamic vinegar

1 tbsp fresh orange juice (if available)

1/2 tsp dijon mustard

2-3 tbsp extra virgin olive oil

 

Combine salad ingredients in a bowl. Separately, whisk together the first 4 dressing ingredients, and while whisking stream in the olive oil and whisk until smooth. Toss together with the salad. Serve.
