For those crazy guys who go hardcore at the gym and live on NO Xplode and Whey Protein, here’s a great way to break that diet and turn that 6 pack into a 4 pack. Eat a slice of cheesecake. You’ll feel better. Trust me. This cheesecake is rich, creamy, and delicious. you will love every bite.
Preheat your oven to 300F.
Crust
1.5 sticks butter
1 1/4 cups graham cracker crumbs
2/3 cup flour
1/3 cup ground nuts (I used pecans)
1/2 tsp kosher salt
2 tbsp sugar
1/2 tsp baking powder
Combine all ingredients, pop in the fridge, spread along the base and sides of a springform pan. Set aside and make the cheesecake batter.
Cheesecake Filling
2 8oz pkgs cream cheese
1/2 cup sour cream
1 tbsp butter
3/4 cup sugar
1 tsp vanilla extract
1/4 cup maple syrup
1/2 tsp kosher salt
2 eggs, at room temp
Beat all ingredients except the eggs together. Add the eggs at the end one at a time and whip until fully incorporated. Pour into the crust and bake for 75 min or until the top is golden at 300F. Remove from oven and allow to cool completely.
Peanut Butter Frosting
1 stick butter
1 cup chunky peanut butter
1 cup powdered sugar
Beat all ingredients together and spread over the top of the cooled cheesecake.
