Stuffed Butternut Squash with Wild Rice
Wild rice is amazing. It’s unusual. It’s sexy. And when you mix it with some cranberries, almonds, and candied orange peels, and bake it to perfection inside the hull of a butternut squash…. its even hotter. Using the candied orange peels makes it taste very similar to a sweet Persian rice dish, Shirin Polov. You can call me if you want, but when I’m eating this… I’m not gonna reach my telephone. Oh, did I mention that this is fully vegetarian, totally healthy, and 100% delicious? PS thank you Mom for coming up with this deliciousness
Sweet Potato Shepherds Pie
Comfort food at its purest. A sweet change from the basic white potato pie. You could even make this on Thanksgiving with some marshmallows on top for a great variation of the basic mashed sweet potatoes with marshmallow fluff.
Veggie Spring Rolls
One of my classmates invited us over to his house last night for dinner. Being the culinary master that I am, I decided to make something to bring with me. I very surprisingly found kosher wonton skins and egg roll wrapper dough at the supermarket and chose to take a stab at making spring rolls and a dipping sauce. It actually came out really well. I went a little mild with the spice because my classmate has kids and I didn’t want them to cry of burning mouths, because I’m a thoughtful considerate man like that. These are delicious, crunchy, and BAKED not fried.
Baked Salmon with Blackberry Ginger Glaze
was watching food network today and saw Sonny make this on “Cooking for Real.” looked delicious. you could probably use a mix of blackberries and blueberries for some great flavor. and if blackberries arent in season when you make this, i would totally use blackberry preserves.
