Quinoa is the new craze. High in protein, this little grain is a relative to the beets and spinaches. This tabouleh salad offers a nice change from using Cous-Cous, a form of pasta.

Extreme Makeover: Leftover Risotto Edition

I don’t know about the rest of you, but except for sushi and chocolate, I don’t really like eating the same thing twice in one week. I like my variety. But that doesn’t mean my leftover food should go to waste just cuz I’m OCD about what I eat. I took my left over Risotto from the other night and turned it into something totally new; almost like a Persian Tadigh. SO good. Try it out :)

Choconana cupcakes

So I go into my kitchen and start getting all my ingredients ready to make my Banana Muffins, cuz they were just so good that I wanted more. Lots more. So I get my banana’s and butter and sugar and I go to get the flour. Wait. Where’s the flour?! WHERES THE FLOUR?!?! Ok so I’m all out of flour. No banana muffins :( but then, like a ray of golden sunlight, I spy with my little eye something…. chocolatey. Yes, I had found a box of chocolate cake mix. Eureka! And so, Choconana Cupcakes were born. And let me tell you, Semi-Homemade just got SOOO much better. Moist and delicious, 24 of these little cakes just is not enough. Instead of Frosting I served a la mode with a scoop of strawberry ice cream. Its like a banana split :)

Empanada’s with Pesto Salsa

I was watching food network the other day, because thats just what I do. And Sunny Anderson was making some really awesome looking empanada’s, and I go, hhmmm that sounds awesome! I’m sure every culture has a form of this dish, some sort of filling inside a crunchy doughy crust. So I got to thinking, how can I make my own? Well, I had some left over Egg Roll skins from my Spring Roll recipe, and decided to put it to good use. These empanada’s are crunchy, hearty, and full of nutrition. Enjoy!
