Alfredo Baked Mac’n'Cheese
Fettucine Alfredo is one of my favorite pasta/sauce combo’s. Super delicious. For Shabbat I decided to make some; I was invited somewhere for dinner and needed to have lunch available for Shabbat day, and I was apprehensive about eating cold alfredo sauce or reheating it in the oven without it staying in a smooth cohesive delicious sauce. And so was born the Alfredo Casserole. Crunchy, scrumptious, & creamy.
Extreme Makeover: Leftover Chicken “Crab” Cakes
After I had recovered from that ridiculous ailment known as a Sinus Infection, I realized that I had wayyyy too much Jewish Penicillin aka Chicken Soup left over. Why should this kosher chicken that costs 500% more than the traif stuff go to waste? So I decided to get inventive. And voila! Like magic, these Chicken Cakes were born into the world. Without labor pains. Well ok, maybe a few contractions here and there.

Niente de Mangiare is Italian for “nothing to eat.” Thats how I felt after I got back to my apartment after Rosh Hashana. After stuffing my face at my parents house for 3 days, I had to come back to reality. And the reality was that I had no groceries in my fridge. I had a bottle of wine, some ground meat and pesto in the freezer, dry pasta, and spices. So, I did what any resourceful man would do: make something out of nothing. If Rachael Ray and Vic Vegas can invent their own culinary words, gosh darnit so can I. This is what happens when a Fritatta meets a Carbonara on a stormy night, and they have a love child from their one night stand. OK, maybe they get married. Who knows? I just know Diana Ross is probably having a heart attack right now.
Penne alla Vodka, PAREVE!!!!
Oh. Em. Gee. Am I good or what? I tweaked a recipe to make pareve “alla vodka” sauce, and let me I tell you, methinks it works. Totally delicious, and can be served along side any form of meat product you like. Since I was too lazy to make some meat for myself today, i garnished with some grated parmesan cheese, as evidenced in the photo below… however the sauce is completely pareve. The only thing that could have made this better is to have thrown in some leaves of fresh basil at the end. yummmm! And heck, why not have yourself a shot of vodka with the meal? You deserve it

You know those times when you see a really great recipe, but you know it needs tweaking? Thats how I feel about some of Claire Robinsons 5 ingredient fix meals. Some are great, others need a little something extra. Like this one. I added a few more ingredients, changed up the technique, and dayummm was this good! Linguine with Avocado and Arugula Pesto
Scrumptious, light, and creamy, this is a great alternative to traditional pesto. Can use Watercress instead of Arugula, any form of pasta, and the cheese can be omitted to make it pareve.
